This dairy free baked potatoes recipe is easy to adapt with simple vegan baked potato toppings. Enjoy as a main dish or serve on the side!

The perfect baked potatoes are soft and fluffy on the inside with a crisp salty skin on the outside that will secure all the toppings you desire. Don't forget to top with a big dollop of homemade vegan sour cream!

I love making instant pot baked potatoes because it's quick and easy! Everyone can add their favorite toppings for a nostalgic and comforting meal.

Cooking baked potatoes in the instant pot has become my go-to method. I used to make them in the oven and even slow cooker, but this speedy contraption makes it too easy!

Russet potatoes make the best baked taters because of their starchiness and thick skin.

Best Vegan Baked Potato Toppings

You really can't go wrong, the world is your oyster! Here are some of my favorite toppings without cheese or butter.

  • Beans
  • Jalapeno
  • Red onion
  • Broccoli
  • Tomato
  • Olives
  • Chives
  • Dairy free cheese
  • Plant based butter
  • Plain vegan yogurt

How to make instant pot baked potatoes

Step One: Prep

Start by placing the trivet in your pressure cooker then add about 1 cup of water.

Pierce each potato with a fork and place on top of the trivet.

Step Two: Cook

Lock the pressure cooker lid and set the steam vent handle to sealing.

Select manual and cook on high pressure for 15 minutes.

Let pressure release naturally for 15 minutes, then turn the steam vent handle to venting to quick release the remaining pressure.

Step Three: Top

Transfer the cooked baked potatoes to a serving plate, slice down the middle, fluff the insides, and add your favorite toppings!

How to Store

Allow baked potatoes to cool then store them in an airtight container or bag in the refrigerator for up to 7 days.

    It would be great if you offered some alternatives that weren't just fake dairy (which often have so much fat and so many chemicals they aren't healthy)
