Ground Beef Taco Salad
Ground Beef Taco Salad combines all your favorite taco toppings and flavors over a bed of lettuce. Makes a great dinner and even better leftover lunch!
Ingredients
- 1 pound ground beef
- 1 (15-ounce) can pinto beans drained and rinsed
- ¼ head of lettuce chopped
- Homemade taco rice
- Homemade taco seasoning
- Homemade guacamole
- Fajita vegetables
Instructions
- Start off by getting all the prep work finished. Begin cooking rice. Mix together taco seasoning. Pour beans into small saucepan and heat on low.
- Brown ground beef in a large skillet. Once cooked, stir in taco seasoning. In a separate skillet, cook fajita vegetables. As the meat and veggies cook, make the guacamole.
- Once everything is cooked and warmed, assemble and serve immediately. Enjoy with your favorite toppings like salsa, jalapeño, and dairy free yogurt in place of sour cream.

Taco Tuesday is the best!!! Since I'm lactose intolerant, I've been putting a dollop of non-dairy original yogurt on each taco. Similar taste and consistency of sour cream!
