I’ve been egg-free for nearly 15 years after developing an egg sensitivity. Over time, I’ve adapted recipes and tried countless products. This guide covers eggless options for just about every need!
Egg Substitutes for Baking
In baking, eggs provide structure, moisture, and leavening, helping bind ingredients together and shape the texture. If you're looking to replace one egg in baking, here are some great options:
- Applesauce: About ¼ cup works wonders, and it keeps things nice and moist.
- Mashed bananas: ¼ cup adds a bit of sweetness and moisture.
- Flaxseed meal: Mix 1 tablespoon of ground flaxseed with 3 tablespoons of water and let it sit for a few minutes to create a flax egg. It’s awesome for binding. This is my preferred substitute for all things baking and cooking!
- Chia seeds: Use 1 tablespoon of chia seeds with 3 tablespoons of water. It works just like flaxseed.
- Silken tofu: ¼ cup gives a nice, dense texture and helps with moisture.
- Dairy-free yogurt: ¼ cup does the trick for moisture and a bit of tang.
- Vinegar + baking powder: 1 tablespoon of vinegar mixed with 1 teaspoon of baking powder can help with leavening.
- Bob's Red Mill Egg Replacer: In my experience, this is the only store-bought replacer that consistency works well. I buy it on Thrive Market!

Egg Substitutes for Scrambles
In scrambles, eggs offer texture and that classic fluffy consistency. If you're looking to replace eggs in a scramble, here are some fantastic alternatives to achieve a similar result.

- Chickpea flour: Mix with water and seasonings to make a batter. It cooks up like scrambled eggs or an omelet. Try it in my chickpea scramble or eggless breakfast muffins.
- JUST Egg: This ready-to-pour plant-based egg replacer scrambles beautifully and tastes delicious. I've used it for my vegan breakfast hash, vegan quiche, and vegan egg bites.

More Egg Substitutes
Whether you're breading, binding, or emulsifying, there are plenty of egg-free alternatives that work just as well in your favorite recipes.
- When cooking veggie patties or meatballs, a flax egg is the way to go! You could also try mashed potatoes, using ¼ cup per egg.
- For breading, dip your food in dairy free milk, then coat with flour or breadcrumbs. Or try aquafaba, the liquid from canned chickpeas, for a light and crispy finish.
- For emulsifying in sauces or mayo, try silken tofu for a creamy base, vegan mayo for convenience, or aquafaba whipped until frothy to help everything blend smoothly.
