Taco Soup is an easy one-pot meal that delivers the same flavor as ground beef tacos but in a soup! It’s filled with ground beef, onion, bell pepper, beans, corn, diced tomatoes, and taco seasoning.
Wanting to make your Taco Tuesday a little healthier by cutting out tortillas? Opt for this taco soup rather than tacos or a burrito!
1 onion, diced
1 bell pepper, diced
1 can (15 oz) corn
1 can (28 oz) diced tomatoes, undrained
1 can (15 oz) black beans, undrained
1 can (15 oz) kidney beans, undrained
2 cups water
Salt and pepper, to taste
Homemade Taco Seasoning: 1 tablespoon chili powder, 1 1/2 teaspoons ground cumin, 1/2 teaspoon paprika, 1/4 teaspoon garlic powder, 1/4 teaspoon onion salt, 1/4 teaspoon black pepper, and a dash of salt
Homemade Ranch Mix Seasoning: 1 tablespoons dried parsley, 1/2 teaspoon dried chives, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon dried thyme, 1/4 teaspoon black pepper, and a dash of salt
1. In a medium-large pot, brown the meat. Add the onion and cook until softened.
2. Mix in remaining ingredients and seasonings, let simmer for at least 30 minutes.
3. Taste and adjust seasoning if needed.
4. Serve topped with diced avocado and tortilla chips.
