Learn how to make the best french toast without eggs or milk! All you need is thick-cut bread, dairy free milk, ground flaxseed, corn starch, maple syrup, vanilla, and cinnamon. It's crispy on the outside and soft on the inside. A sweet and satisfying treat to start your morning!

This quick and easy allergy-friendly French toast recipe is perfect if you're like me-either allergic to eggs and/or lactose intolerant! It's also great for anyone with food restrictions or if you simply don't have eggs on hand.

Ingredient notes

You'll love this recipe for its creamy, tender center and perfectly crisp exterior. Below is a list of ingredients needed for this meal. Follow my tips on each ingredient for best results.

  • Bread: Use a hearty, thick-sliced bread like sourdough, French bread, or Texas toast. I typically use slightly stale homemade sourdough bread. Using day-old bread is best because it's better at absorbing the liquid mixture and creates a soft bite.
  • Dairy free milk: Any milk will work! I tend to use almond milk, oat milk, or coconut milk. In recipe testing, I found you can even use water to make French toast! Who knew?! It's not as rich, creamy, and flavorful but totally works in a pinch.
  • Cornstarch: Corn starch thickens the non-dairy milk, helping the batter cling to the bread. It creates a light, fluffy, custard-like texture inside while crisping and browning the outside.
  • Ground flax: Flaxseed meal or ground flax seed also helps thicken the French toast batter, similar to how a flax egg binds ingredients together in eggless desserts.
  • Maple syrup: Adds a touch of sweetness! Feel free to substitute with granulated sugar, brown sugar, or even coconut sugar.
  • Vanilla: A must to any French toast recipe! Vanilla extract adds a sweet, warm flavor.
  • Cinnamon: Ground cinnamon brings extra depth of flavor. Add a pinch of ground nutmeg or pumpkin pie spice for extra flavor.

Tips and variations

  • Heat the skillet over medium until warm before adding the French toast for a golden exterior. If it's too hot, the bread may burn. If the skillet isn't hot enough, the French toast may turn out pale and soggy instead of golden and crisp.
  • For vegan gluten free french toast, use gluten free bread!
  • Substitute ground chia seeds for ground flaxseeds in a 1:1 ratio. Chia may create a slightly thicker mixture, so if needed, add a splash more non-dairy milk to adjust the consistency.

Avoid soggy bread

The bread should be well-coated but not soggy. When you lift the slice from the batter, it should feel wet but still hold its shape. If it starts to fall apart, you've soaked it too long. You'll know it's just right when the bread feels heavy and looks evenly coated, but you can still pick it up without it breaking. Think of it like a sponge that's damp but not dripping.

Ingredients
  

  • ½ cup dairy free milk
  • 2 tablespoon corn starch
  • ½ tablespoon ground flaxseed
  • 1 teaspoon maple syrup
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 1 tablespoon vegan butter
  • 4 slices thick-cut bread

Instructions
 

  • In a 1 cup measuring cup or shallow bowl that's wide enough to fit a piece of bread, whisk together dairy-free milk, corn starch, ground flaxseed, maple syrup, ground cinnamon, and vanilla.

  • Heat about a tablespoon of vegan butter over medium heat in a large skillet. Once warm, stir the batter, and working in batches, dip each slice of bread into the mixture. Let soak for 10-15 seconds on each side.

  • Place soaked slices of bread in skillet and cook for 2-3 minutes on each side, until golden brown. These are best served immediately! Enjoy topped with syrup, vegan butter, fresh berries, or powdered sugar.

Notes

This small-batch recipe makes enough for two people or one person for two days. If you're cooking for a crowd, scale up the recipe.
To keep French toast warm and crisp, preheat oven to 250°F and place a wire rack on a baking sheet. As you cook, transfer each batch to the rack to prevent sogginess or drying out.
