- Bread: Use a hearty, thick-sliced bread like sourdough, French bread, or Texas toast. I typically use slightly stale homemade sourdough bread. Using day-old bread is best because it's better at absorbing the liquid mixture and creates a soft bite.
- Dairy free milk: Any milk will work! I tend to use almond milk, oat milk, or coconut milk. In recipe testing, I found you can even use water to make French toast! Who knew?! It's not as rich, creamy, and flavorful but totally works in a pinch.
- Cornstarch: Corn starch thickens the non-dairy milk, helping the batter cling to the bread. It creates a light, fluffy, custard-like texture inside while crisping and browning the outside.
- Ground flax: Flaxseed meal or ground flax seed also helps thicken the French toast batter, similar to how a flax egg binds ingredients together in eggless desserts.
- Maple syrup: Adds a touch of sweetness! Feel free to substitute with granulated sugar, brown sugar, or even coconut sugar.
- Vanilla: A must to any French toast recipe! Vanilla extract adds a sweet, warm flavor.

How to make eggless french toast

Step 1: Whisk batter together
In a measuring cup or shallow bowl that's wide enough to fit a piece of bread, whisk all of the ingredients together (except for the bread).

Step 2: Soak each slice of bread
Add a little bit of vegan butter or coconut oil to a pan over medium heat and melt. Alternatively, coat the pan with cooking spray. Stir the mixture between dipping the bread to keep the cornstarch and cinnamon from settling at the bottom. Working in batches, dip each side of the bread in the batter and let soak for about 10-15 seconds.

The bread should be well-coated but not soggy. When you lift the slice from the batter, it should feel wet but still hold its shape. If it starts to fall apart, you've soaked it too long. You'll know it's just right when the bread feels heavy and looks evenly coated, but you can still pick it up without it breaking. Think of it like a sponge that's damp but not dripping.

Step 3: Cook until golden brown
Place the soaked bread to the pan and cook for 2-3 minutes on each side, until golden brown. Top your French toast with syrup, fresh berries, dairy free whipped cream, vegan butter, chopped nuts, or a dusting of powdered sugar!
