In a 1 cup measuring cup or shallow bowl that's wide enough to fit a piece of bread, whisk together dairy-free milk, corn starch, ground flaxseed, maple syrup, ground cinnamon, and vanilla.
Heat about a tablespoon of vegan butter over medium heat in a large skillet. Once warm, stir the batter, and working in batches, dip each slice of bread into the mixture. Let soak for 10-15 seconds on each side.
Place soaked slices of bread in skillet and cook for 2-3 minutes on each side, until golden brown. These are best served immediately! Enjoy topped with syrup, vegan butter, fresh berries, or powdered sugar.

This small-batch recipe makes enough for two people or one person for two days. If you're cooking for a crowd, scale up the recipe.To keep French toast warm and crisp, preheat oven to 250°F and place a wire rack on a baking sheet. As you cook, transfer each batch to the rack to prevent sogginess or drying out.
