A classic gimlet is made using gin, simple syrup, and lime juice. My version swaps gin for a non-alcoholic gin and introduces rosemary simple syrup for an herbaceous twist. It's a great tasting non-alcoholic alternative. Great for parties, dry January, or nights at home.

Ingredient notes
- Non alcoholic gin: I recommend Ritual Gin Alternative. It's bright, with botanical notes, and a crisp finish. The best part is that Ritual Zero Proof spirits are crafted, rather than distilled, so they never have any alcohol to begin with.
- Simple syrup: This adds sweetness to the drink and balances out the tartness from the lime. To take this mocktail to the next level, I infused my homemade simple syrup with sprigs of fresh rosemary. This is optional, but adds an extra layer of complexity to the drink.
- Lime juice: Fresh lime juice adds so much flavor to the non alcoholic gin gimlet! I highly suggest using freshly squeezed lime juice since it really makes a difference in taste.

How to make a rosemary gimlet mocktail

- Make the simple syrup by dissolving sugar and water together in a small saucepan. Bring to a boil, stirring slowly. If infusing with rosemary, add now. Let simmer for 1-2 minutes. Remove from heat and let sit for at least 30 minutes. Strain into a glass jar and store in the fridge.
- Add non alcoholic gin, simple syrup, and fresh lime juice to a cocktail shaker or mixing glass filled with ice. Shake or stir until cold, at least 30 seconds.
- Strain gimlet mocktail into a chilled coupe glass and garnish with a sprig of fresh rosemary or a lime wheel.

Tips and variations
- No limes? No problem! Use fresh lemon juice instead.
- Add a splash of sparkling water to make the mocktail less "strong" tasting.
- Make it sweeter by adding up to a ½ ounce extra of simple syrup.
