It allows you to enjoy sweet and savory vegan comfort food in just minutes. Great for those wanting to recreate delicious recipes that traditionally call for eggs.

What is just egg?

JUST Egg is a plant based substitute made from mung beans. It acts as a binding ingredient, emulsifier, and leavening agent.

You can purchase JUST Egg products online or in the refrigerated section at most grocery stores. Check their online store locator, but I typically purchase JUST Egg at Sprouts, Whole Foods, Kroger, Target, or Walmart.

Their first and most popular product is JUST Egg plant based scramble, a vegan liquid egg replacer. The liquid transforms into a soft and fluffy scrambled eggs or an omelette before your eyes.

The brand has two other products, JUST Egg Folded and JUST Egg Sous Vide. JUST Egg Folded is an eggless patty that's perfect for breakfast tacos or sandwiches. Whereas, JUST Egg Sous Vide are bite-sized vegan egg muffins.

All of the products are made from plants, not chickens. They're dairy free, egg free, gluten free, cholesterol free, and free from artificial flavors. Of course, be sure to double check all packaging for allergens!

It's hard to compare it to classic eggs or tofu scramble, JUST Egg has a unique egg-like taste with a light, bouncy texture.

What are mung beans?

Mung beans are small green legumes packed with fiber, folate, potassium, and magnesium. They have a slightly sweet, nutty flavor.

How much JUST Egg is equivalent to one egg?

3 tablespoons of JUST Egg equals 1 egg.

How long does JUST Egg last?

Once opened, a refrigerated bottle of JUST Egg should be used within 7 days.

Can you freeze JUST Egg liquid?

The company does not recommend freezing it, but I have personally stored an unopened bottle of JUST Egg in the freezer for a couple months. If you do, be sure to let it thaw completely in the fridge before use.

Can you microwave JUST Egg?

Yes! You can cook and reheat JUST Egg in the microwave.

The ingredient label on the bottle of JUST Egg includes water, mung bean protein isolate, expeller-pressed canola oil, contains less than 2% of dehydrated onion, gellan gum, natural carrot extractives (color), natural flavors, natural turmeric extractives (color), potassium citrate, salt, sugar, tapioca syrup solids, tetrasodium, pyrophosphate, transglutaminase, and nisin (preservative).

JUST Egg Folded includes a similar ingredient list with water, mung bean protein isolate, expeller-pressed canola oil, corn starch, contains less than 2% of baking powder (sodium acid pyrophosphate, sodium bicarbonate, corn starch, monocalcium phosphate), dehydrated garlic, dehydrated onion, carrot extract (color), natural turmeric extract (color), salt, and transglutaminase.
