Buffalo Chickpea Salad is an easy vegan dish that comes together with buffalo sauced chickpeas, spinach, avocado, celery, red onion, tomato, and a cashew ranch dressing.

Vegan Buffalo Chickpea Salad Recipe

I hate to admit this but when I was working in an office, I ate out for lunch everyday. *CRINGE* I don't think there's anything wrong with grabbing lunch with coworkers or using your lunch break to decompress on your own - But I was going out every single day. Even on days I packed a lunch...

When I started working from home, I loved being able to make delicious and fresh lunches all throughout the week. I quickly realized I didn't want to do this Monday-Friday, so I began my version of meal prepping. Create a few awesome dishes, that kept well and weren't boring. This buffalo chickpea salad is just that!

Whether you work in an office or at home, this salad will make you excited for a homemade lunch. Pile your greens high, top with soft buffalo sauced chickpeas, creamy avocado, crunchy celery, red onion, juicy tomatoes, and cool vegan ranch dressing!

Buffalo Chickpea Salad

Buffalo Chickpea Salad is an easy vegan dish that comes together with buffalo sauced chickpeas, spinach, avocado, celery, red onion, tomato, and a cashew ranch dressing.

Ingredients
  

  • 2 cans chickpeas drained and rinsed
  • ¼ cup buffalo sauce
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Topping Ideas

  • Spinach
  • Avocado
  • Celery
  • Red onion
  • Tomato
Prevent your screen from going dark while you're cooking!

Instructions
 

  • In a medium skillet, heat a little olive oil over medium heat. Add chickpeas and sauté for about 5 minutes. Continue to cook, mixing in buffalo sauce, garlic powder, salt, and pepper. Once warm, remove from heat.
  • To assemble the salad, arrange a bed of spinach in a serving bowl. Top with buffalo sauced chickpeas, avocado, celery, red onion, and tomato. Drizzle with vegan ranch dressing and serve.

Notes

Make your own vegan ranch dressing using this recipe! Store leftovers in an airtight container in the refrigerator.
