How To Make Vegan Ranch Dressing
First things first, soak raw cashews for 8 hours. If you're in a rush, pour boiling hot water over them and soak for 5-10 minutes. Once soaked, drain and rinse then transfer to your blender. Mix with water, then add remaining ingredients, and blend again. Taste and adjust seasoning, then chill in the fridge!

- 1 cup raw cashews soaked in water for 8 hours, drained and rinsed
- ¾ cup water
- 1 tablespoon fresh lemon juice
- 1 tablespoon apple cider vinegar
- 1 garlic clove
- 1 tablespoon fresh dill finely chopped
- 1 tablespoon fresh parsley finely chopped
- Salt and pepper to taste
- Mix cashews and water together in a high-speed blender until smooth and creamy. Add remaining ingredients and mix. Taste and adjust seasoning, if needed.
