Dairy-Free Tomato Ricotta Toast comes together with vegan ricotta cheese, juicy sliced tomatoes, and fresh basil.This is the perfect toast for two recipe! It's delicious for a light lunch or afternoon snack.Start by toasting two slices of bread. Then spread vegan ricotta crust to crust. Arrange sliced tomatoes on top, then finish with a sprinkling of salt and pepper. I added fresh basil leaves to my toast for an extra flavor punch.

Dairy-Free Ricotta Cheese

For this simple toast recipe, you can use store-bought or homemade almond ricotta!Almond ricotta comes together with peel almonds, lemon juice, water, and salt. Toss everything together in a blender and mix until desired consistency is reached.This plant-based substitute is delicious spread on crackers, used in pizzas, and lasagna!Want more tomato recipes? Ingredients
  

  • 2 slices of bread
  • 4 tablespoons vegan ricotta divided
  • 1 large tomato sliced
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Homemade Dairy-Free Ricotta Cheese

  • 2 cups almonds
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • ½ cup water
Prevent your screen from going dark while you're cooking!

Instructions
 

  • To make homemade dairy-free almond ricotta cheese: Soak the raw whole almonds in hot water for a few hours to loosen the skins. Once soaked, peel the skins off of each almond and place in a food processor. Blend almonds with lemon juice, salt, and water until everything comes together. Add additional water to achieve desired consistency. Store covered in the refrigerator for up to a week!
  • To assemble dairy-free tomato basil ricotta toast: Start by toasting two slices of bread. Once toasted, spread vegan ricotta crust to crust on each slice. Arrange sliced tomatoes on top of ricotta. Finish with salt, pepper, and fresh basil.
