Peach and Tomato Bruschetta

Peach and Tomato Bruschetta is bursting with flavor from farm fresh peaches, tomatoes, and basil. Quick, easy, and perfect for a summer appetizer or snack!

Peach and Tomato Bruschetta is a summery take on one of my favorite easy appetizers. It's dairy-free, vegan-friendly, and can easily be altered to accommodate gluten-free diets.

It's a quick and effortless recipe, perfect for potlucks or date night at home!

Stone Fruit Bruschetta

This juicy bruschetta comes together with under 10 ingredients, that can all be found at Sprouts.

Sprouts' Produce Department has an incredible variety of summer stone fruit. From peaches and apricots, to plums, mangos, and more! Most of which are grown on family-owned farms!

For this delicious bruschetta, I'm pairing peaches with tomatoes, on top of toasted baguette slices, garnished with fresh basil, and drizzled in balsamic vinegar.

Tips for Stone Fruit

Stone fruits get their name from the pit in their center. They're rich in vitamin-c, may improve digestive health, and helps support a healthy immune system.

What if my peaches aren't quite ripe? Place them in a paper bag at room temperature and check daily for ripeness.

How do I preserve freshness for a few days? Store your ripe peaches (or any stone fruit) in a plastic bag in the crisper drawer of your refrigerator.

My peaches are too ripe now... Toss them in a smoothie, stir em into sangria, or make a fruit compote! Learn more about stone fruit here.

Peach and Tomato Bruschetta Recipe

  • Freshly-baked baguette
  • Olive oil
  • Ripe peaches
  • In-season tomatoes
  • Fresh basil
  • Balsamic, optional but highly recommended

To assemble, start by cutting the baguette into ½ inch slices. Toast the slices by broiling, baking, or grilling. Combine the diced peaches and tomatoes together with olive oil, basil, salt, and pepper. Stir well then serve on toasted bread. Right before serving, drizzle each slice with balsamic vinegar.

Ingredients
  

  • 1 fresh baguette
  • 3 cups diced peaches (3 peaches)
  • 1 ½ cups diced grape tomatoes (1 pint grape tomatoes)
  • ¼ cup chopped fresh basil
  • 1 tablespoon olive oil
  • 1 teaspoon salt (more or less, to taste)
Prevent your screen from going dark while you're cooking!

Instructions
 

  • Cut baguette into ½ inch slices and place under broiler until toasted.
  • Meanwhile, combine remaining ingredients together in a medium sized bowl. Stir well then taste and adjust seasoning, if needed.
  • To assemble, top toasted baguette slices with bruschetta and serve!
