This taco soup recipe is filled with seasoned ground beef, onion, bell pepper, beans, corn, diced tomatoes, and taco seasoning. It cooks in about 30 minutes on the stove.

Ingredients

  • Ground beef: I suggest using 80% lean / 20% fat ground beef for my tacos. However, you can use 85/15, 90/10, or a lean ground beef, depending on your preferences.
  • Onion: Red onion or yellow onion works best here.
  • Bell pepper: Any color will work.
  • Diced tomatoes: I recommend canned diced tomatoes or rotel.
  • Corn: You can use canned sweet corn or frozen corn kernels that have been thawed.
  • Beans: I prefer using black beans and kidney beans, but pinto beans could also be used.
  • Seasoning: We'll be whisking together a homemade taco seasoning made of chili powder, paprika, ground cumin, garlic powder, salt, and pepper.

How to make creamy beef taco soup

  1. Cook the beef: Brown the ground beef in a medium-large stockpot.
  2. Add remaining ingredients: Toss in the onion, bell pepper, tomatoes, corn, and beans.
  3. Season and bring to a simmer: Stir in seasoning and let simmer for at least 30 minutes.
  4. Serve and enjoy: Taste and adjust seasoning, if needed. Serve warm!

Substitutions and variations

  • Slow cooker taco soup: In a large skillet, cook ground beef with onion and bell pepper until meat is browned. Transfer to the slow cooker and stir in remaining ingredients. Cook on high for 4 hours or on low for 8 hours.
  • Turkey taco soup: Replace ground beef with ground turkey.
  • Vegan taco soup: Replace the the ground beef with meatless crumbles or simply leave out. Suitable for plant based diets and vegetarians.

How to store leftovers

  • Store leftover taco soup in an airtight container in the refrigerator for up to 3 days.
  • To freeze, let the soup cool completely then transfer to an airtight container or freezer bag. Freeze for 4-6 months. Thaw frozen soup overnight in the fridge.
  • Reheat soup in a saucepan on the stove or in the microwave until warmed through.

Ingredients
  

  • 1 pound ground beef
  • 1 yellow onion diced
  • 1 bell pepper diced
  • 1 (28-ounce) can diced tomatoes drained
  • 1 (15-ounce) can sweet corn drained and rinsed
  • 1 (15-ounce) can black beans drained and rinsed
  • 1 (15-ounce) can kidney beans drained and rinsed
  • 2 cups water
  • 1 tablespoon chili powder
  • 1 ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions
 

  • In a medium-large pot, brown the meat. Add the onion and cook until softened.
  • Mix in remaining ingredients and seasonings, let simmer for at least 30 minutes.
  • Taste and adjust seasoning if needed. Serve warm, topped with diced avocado and tortilla chips.
