This vegan tomato sandwich is a southern classic! It's quick and easy to make with juicy tomatoes and creamy vegan mayo on soft white bread.

If you grew up in the South, you probably already know about the beloved tomato mayo sandwich. If not, you may be wondering what the heck I'm talking about!

It's a cold sandwich cherished by many due to its long history. The earliest reference of the tomato mayonnaise sandwich was in The Virginia Chronicle in 1911.

What is a tomato sandwich?

A classic tomato sandwich comes together with two slices of soft white bread, creamy mayonnaise, big ol juicy tomatoes, salt, and pepper. Enjoy as a light lunch or easy appetizer! It's the perfect summer meal.

Tomato mayo sandwich ingredients

This simple southern classic recipe is a childhood favorite. They are loved by many and the specific type of ingredients are highly debated depending what you grew up eating. Here's my rendition to make it fit my dairy free and egg free needs!

  • Bread: I'm in the squishy, soft white bread only camp. I prefer to leave my bread untoasted so it can soak up all that salty tomato juice goodness. Other popular bread options include whole grain toast, sourdough bread, or gluten free bread, if needed.
  • Mayo: I typically use my homemade vegan mayonnaise that uses an aquafaba base. Feel free to use your favorite store-bought mayo like Hellmann's Vegan Dressing & Spread, Follow Your Heart Vegenaise, or Sir Kensington's Classic Vegan Mayo.
  • Tomatoes: You're going to want to use large, juicy, ripe beefsteak tomatoes! They're thick, hearty and oh so flavorful. If you can't find a fresh beefsteak tomato at your farmers market or grocery store, grab some heirloom tomatoes instead.
  • Seasoning: Keep it simple, y'all! Salt and pepper goes a long way here. The salt enhances the flavor of the tomatoes and the freshly ground black pepper gives this sandwich a nice bite.

How to make vegan tomato mayo sandwiches

  • Slice the beefsteak tomatoes.
  • Spread the vegan mayo on each slice of bread.
  • Add tomato slices, sprinkle with salt and pepper.
  • Close sandwiches, serve, and enjoy!

Ingredients
  

  • 2 large ripe tomatoes
  • 8 slices white bread
  • ½ cup vegan mayonnaise
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
Prevent your screen from going dark while you're cooking!

Instructions
 

  • Cut the tomatoes into ½-inch thick slices.
  • Spread a generous amount of vegan mayo on each slice of white bread.
  • Add a tomato slice or two to half of the slices of white bread. Sprinkle with salt and pepper.
  • Top with the remaining slices of bread to close sandwich and serve immediately.
