- Mayo: I typically use my homemade vegan mayonnaise that uses an aquafaba base. Feel free to use your favorite store-bought mayo like Hellmann's Vegan Dressing & Spread, Follow Your Heart Vegenaise, or Sir Kensington's Classic Vegan Mayo.
- Tomatoes: You're going to want to use large, juicy, ripe beefsteak tomatoes! They're thick, hearty and oh so flavorful. If you can't find a fresh beefsteak tomato at your farmers market or grocery store, grab some heirloom tomatoes instead.
- Seasoning: Keep it simple, y’all! Salt and pepper goes a long way here. The salt enhances the flavor of the tomatoes and the freshly ground black pepper gives this sandwich a nice bite.

Ingredients
- 2 large ripe tomatoes
- 8 slices white bread
- ½ cup vegan mayonnaise
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Cut the tomatoes into ½-inch thick slices.
