Seasoned baby potatoes are a great side to many dishes! We recently enjoyed them with stuffed peppers, and they were a beautiful mix. The best part–they take less than 30 minutes to make!
Seasoned Fingerling Potatoes
1-2 pounds assorted fingerling potatoes
2 cloves garlic, minced
Crushed red pepper flakes
1. Wash the baby potatoes clean, then place in a saucepan. Cover potatoes with water and stir in salt.
2. Bring to a boil. Once boiling, reduce the heat to a simmer and let cook. This takes about 10-20 minutes. Check around 15 minutes. Potatoes are done when utensils can slide in easily.
3. Once cooked, drain the potatoes. Let slightly cool, to touch. Then cut into halves or quarters.
4. Heat a skillet with olive oil then transfer potatoes to skillet. Sprinkle on herbs and gently mix until well coated.
5. Serve and enjoy!
