Melon Cucumber Salsa

Melon Cucumber Salsa is crisp, refreshing, and flavorful! It comes together with fresh melon, cucumber, red onion, jalapeño, lime juice, and cilantro.

This light salsa is perfect for summer! It's great as an appetizer, side dish, or topped on tacos.

It comes together in just a few minutes with less than 10 ingredients. The recipe is super forgiving, so feel free to add or omit ingredients as you please.

Fresh Fruit Salsa

During my last trip to Sprouts, they had over 10 unique varieties of melons to choose from! I grabbed a couple hami melons, canary melons, and an orange honeydew.

For this recipe, I used a hami melon since it pairs well with cucumber and is a great source of vitamins a and c.

How to Make Melon Cucumber Salsa

What You'll Need:

  • Hami melon
  • English cucumber
  • Red onion
  • Jalapeño
  • Lime juice
  • Fresh cilantro
  • Kosher salt

Dice melon, cucumber, red onion, and jalapeño then combine with remaining ingredients in a large mixing bowl. Taste and adjust seasoning, if needed. Cover bowl and let chill in the refrigerator for flavors really come together!

Tips and FAQ

If you can't find a hami melon, try cantaloupe, watermelon, or your favorite melon variety instead.

I used an english cucumber because of its mild taste and lack of seeds. Using your standard cucumber is perfectly fine though!

Make this cucumber salsa your own. Want more crunch? Add some diced bell pepper. Less spice? Simply omit the jalapeño. More spice? Toss in additional pepper or try a serrano.

Serve melon cucumber salsa with tortilla chips, pita chips, or thinly sliced cucumber. This salsa is also great garnished on tacos.

Leftovers should be stored covered in the fridge for a few days. Before serving, give it a quick stir and enjoy!

Ingredients
  

  • 5 cups diced hami melon (1 medium melon)
  • 3 cups diced english cucumber (1 cucumber)
  • ¼ cup diced red onion (½ small onion)
  • 2 tablespoons diced jalapeño (1 large jalapeño)
  • 2 tablespoons fresh lime juice (1 large lime)
  • 1 tablespoon fresh chopped cilantro
  • ½ teaspoon salt
Prevent your screen from going dark while you're cooking!

Instructions
 

  • Combine melon, cucumber, red onion, jalapeño, lime juice, cilantro, and salt in a large mixing bowl. Gently stir together then taste and adjust seasoning, if needed. Cover bowl and chill in the refrigerator, to let flavors come together.
