There's something about a crisp, fresh salad that pairs so perfectly with the weather warming up! I love a massaged kale salad with roasted veggies in the fall, but come summer, I'm all about bright salads with crunchy lettuce, juicy tomatoes, and the works.

You know how some salads leave you unfulfilled and longing for more? That's definitely NOT the case here! This honey mustard chicken salad is filling, wholesome, packed with protein - and it's meatless!

Vegan Honey Mustard Chicken Salad Ingredients

Fresh Ingredients

For my vegan honey mustard chicken salad, you only need a handful of ingredients. Don't fret if you don't have something on hand, just add your own twist to the recipe! Try spinach instead of romaine or swap out tomatoes for chopped bell pepper.

Here's what's on my shopping list:

  • Romaine lettuce
  • Gardein Seven Grain Crispy Tenders
  • Cherry tomatoes
  • Sliced red onion
  • Fresh or frozen corn kernels
  • Avocado, of course

Over the years I've gradually moved towards a more plant-based diet. Sometimes I tell people I'm 99% vegan, because I always eat dairy-free & egg-free and didn't grow up eating a lot of meat or seafood.

My sister became vegetarian when we were in middle school, so my family always had Gardein on hand.

Lately, I've been doing all my grocery shopping online or using curbside pickup. Whole Foods has a great online ordering process with delivery through Amazon!

Find your local store, select the groceries you need, and proceed to checkout. From there, you'll confirm your address, select a day and time for your doorstep delivery, then wait for your goodies to arrive.

If you're going in the store, pop over to the freezer section to pick up a bag or two. Since they're frozen, they stay fresh for several months.

Straight from the freezer, these crispy tenders are ready to eat in under 20 minutes. Warm them in a conventional or toaster oven, flip once, and that's it. Couldn't be more convenient!

For this salad, I sliced each tender in half once they came out of the oven. They made perfect little bite-sized strips.

Vegan Honey Mustard Dressing

Y'all, this dressing is so good! It comes together with three common pantry ingredients for a delicious dressing. Here's what you'll need:

  • Agave nectar
  • Yellow mustard
  • Garlic powder

(For a quick vegan snack, dip tenders straight into this dressing!!)

Ingredients
  

  • 1 package Gardein® Seven Grain Crispy Tenders
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes sliced
  • ½ red onion sliced
  • ¼ cup corn kernels
  • 1 avocado sliced

Vegan Honey Mustard

  • ¼ cup yellow mustard
  • 2 tablespoons agave nectar
  • ¼ teaspoon garlic powder
Prevent your screen from going dark while you're cooking!

Instructions
 

  • Prepare the tenders according to package instructions. As they warm in the oven, whisk together the vegan honey mustard ingredients and set aside.
  • Add chopped lettuce, sliced tomatoes, sliced red onion, corn, and sliced avocado to a salad bowl. Cut the tenders in half for strips then add to salad.
  • Drizzle dressing on top or serve on the side.

Notes

Store leftovers covered in the refrigerator. This salad is just as good served cold the next day.
