My husband often makes beef brisket on the pellet grill smoker for holiday dinners, family gatherings, and of course, summer get-togethers. If you’re smoking brisket, chances are you’re going to have some extra leftover.
I’m going to assume that if you found your way to this recipe, you already have your tender brisket smoked low and slow to perfection and you’re wanting to find new ways to enjoy those leftovers.

- Leftover beef brisket: My husband’s pellet grill brisket is used for these easy brisket sandwiches. The smoked brisket is perfectly tender, juicy, and full of flavor.
- Barbecue sauce: Use homemade barbecue sauce or your favorite bbq sauce from the grocery store! We typically use Kinders BBQ Sauce or Sweet Baby Ray's BBQ Sauce
- Bread: You can use any kind of bread or burger buns. I've been on a homemade sourdough bread kick, so that's what's pictured here. Other popular options include burger buns, brioche buns, French rolls, and Texas toast.
- Toppings: Keep it classic with red onions and zesty sliced pickles or add a crunch with coleslaw, kick up the heat with pickled jalapeños, or make it extra savory with crispy bacon.
How to make smoked brisket sandwiches

- Reheat brisket in the oven with a few tablespoons of leftover juices or BBQ sauce at 325F for about 20 minutes. You can also warm brisket in a small saucepan on the stovetop on low-medium heat, but I do not recommend reheating in the microwave.
- Toast the bread or buns in the toaster, on a skillet, or in the oven. Butter them and set aside.
- Assemble the sandwich by layering pickle slices, chopped or sliced brisket, red onion, and any other toppings. Drizzle with extra sauce and serve.

- 8 slices of bread
