I have been experimenting with vegan and vegetarian recipes even more than usual lately. I would say that my husband and I eat plant-based meals about 90% of the time, without even trying. Ingredients
Instructions
- Cut onion, tomato, peppers into bite-size pieces.
- Heat 2 tablespoons olive oil in a medium-sized skillet and add onion, tomato, and peppers. Cook until vegetables are softened (about 5-10 minutes).
- Add veggies to tortilla, top with GO VEGGIE shreds.
- Cut avocado into slices and top taco with a few slices per tortilla.
- Serve with a side of salsa and sliced lime to garnish.
