Soft Shell Vegetable Tacos with Avocado and Salsa

I have been experimenting with vegan and vegetarian recipes even more than usual lately. I would say that my husband and I eat plant-based meals about 90% of the time, without even trying. Of course, however, I am always looking for new and fun meatless recipes. Enter GO VEGGIE'S Soft Shell Veggie Tacos. Easy to make, speedy, and delicious!

Soft Shell Tacos with Lactose Free Cheese

Giving up dairy or staying away from lactose due to diet restrictions is so much easier with alternatives and substitutions. GO VEGGIE has several healthier cheese alternatives, whether you're looking for lactose-free, soy-free, gluten-free, or vegan cheese, they have a type for you! From shreds to singles, and cream cheese to grated topping and more, my fridge is always stocked.

Okay, back to the tacos! Everybody has their favorite. Maybe you like to keep it classic with seasoned ground beef or grilled chicken, or maybe you like to spice it up a bit with carnitas or fish. But if you're looking for a meatless taco option that is tasty and filling enough to please everyone, you can't go wrong with vegetable tacos. I have always loved soft shells but one look at the label can have your jaw on the ground from the calories-even as a non-calorie-counter. These veggie tacos are wrapped in my homemade tortillas made from two simple ingredients: masa and water. I highly recommend giving them a try!

Dairy Free Soft Shell Tacos

Soft Shell Veggie Tacos come together in just minutes. Simply cook vegetables until softened, load up each tortilla with veggies, avocado, and lactose-free shreds, then serve with your choice of salsa and a lime. The best part about veggie tacos is you get to make them your own. Not a fan of spice? Go for a mild pico de gallo. Want to add an extra dimension to your taco? Check out some pineapple salsa. Stuff your tortillas full of all the stuff you want and enjoy!

Soft Shell Veggie Tacos with Go Veggie

Soft Shell Veggie Tacos come together in about 10 minutes with fresh vegetables and lactose-free cheese. This quick and easy recipe is perfect for meatless meals! Adjust the heat and flavor profile depending on the salsa you use.
Servings: 4 tacos

Ingredients
  

  • 4 soft tortillas (corn or flour)
  • ½ cup red peppers
  • ½ cup green peppers
  • 1 cup tomato
  • 1 cup onion
  • 1 avocado
  • 1 cup GO VEGGIE Lactose Free Cheddar Shreds
  • ½ cup salsa
  • 2 tablespoons olive oil
  • 1 lime
Prevent your screen from going dark!

Instructions
 

  • Cut onion, tomato, peppers into bite-size pieces.
  • Heat 2 tablespoons olive oil in a medium-sized skillet and add onion, tomato, and peppers. Cook until vegetables are softened (about 5-10 minutes).
  • Add veggies to tortilla, top with GO VEGGIE shreds.
  • Cut avocado into slices and top taco with a few slices per tortilla.
  • Serve with a side of salsa and sliced lime to garnish.
