Soft Shell Veggie Tacos with Go Veggie
Soft Shell Veggie Tacos come together in about 10 minutes with fresh vegetables and lactose-free cheese. This quick and easy recipe is perfect for meatless meals! Adjust the heat and flavor profile depending on the salsa you use.

Ingredients

red peppers

green peppers

tomato

onion

avocado

GO VEGGIE Lactose Free Cheddar Shreds

salsa

tablespoons
olive oil

lime
Instructions
Cut onion, tomato, peppers into bite-size pieces.
Heat 2 tablespoons olive oil in a medium-sized skillet and add onion, tomato, and peppers. Cook until vegetables are softened (about 5-10 minutes).
Add veggies to tortilla, top with GO VEGGIE shreds.
Cut avocado into slices and top taco with a few slices per tortilla.
Serve with a side of salsa and sliced lime to garnish.
