Gnocchi with Fresh Basil Pesto

Gnocchi with Pesto is ridiculously easy and crazy flavorful! All you need is a package of potato gnocchi, fresh basil pesto, olive oil, salt, and pepper.

I love gnocchi! Dressed with garlic butter, marinara, or now with fresh basil pesto. These little Italian dumplings may be cloud-like but they're also rich and hearty.

I remember the first time my college roommate pan-fried her gnocchi after cooking it. I was like "um, what are you doing?!?" and she thought I was crazy for not doing it before. My gnocchi game was forever changed.

Onto the basil pesto... If you remember from previous posts, we have a ton of fresh basil from our AeroGarden so finding new ways to use it up has been super fun! Pesto pasta is a staple, but you rarely see it served on gnocchi.

Gnocchi with Fresh Basil Pesto

Gnocchi with Fresh Basil Pesto is ridiculously easy and crazy flavorful! All you need is a package of potato gnocchi, fresh basil pesto, olive oil, salt, and pepper.

Ingredients
  

  • 2 cup fresh basil
  • ⅓ cup pine nuts
  • ¼ cup extra virgin olive oil
  • 4 cloves garlic
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 (17.5-ounce) package potato gnocchi
Prevent your screen from going dark while you're cooking!

Instructions
 

  • Blend fresh basil, pine nuts, olive oil, garlic, lemon juice, salt, and pepper together in a food processor until smooth. Set aside.
  • Cook gnocchi according to package directions. Once cooked, drain and return to pot. Turn the heat to low-medium and let brown on both sides.
  • Pour fresh basil pesto into pot and toss to combine. Serve immediately.

    This looks SO good! Anything with gnocchis is always great, but pesto is such a great option! I've been needing to use up some basil from my garden so I think I'm going to have to put this on the meal plan for next week! Great post!

    I LOVE gnocchi! Especially with pesto. I would love to see how you make dairy free and egg free gnocchi! I make gluten-free potato gnocchi using a little gluten-free flour and ricotta.

    I've actually never had gnocchi but when I do, I'll definitely whip up a pesto sauce like this one for it! Tangy and creamy sauce + pillowy gnocchi = one happy eater!
