Vegan Tofu Feta Cheese
is dairy-free, gluten-free, and nut-free! It's perfect for salads and so easy to whip up.

Ingredients

ounces
firm tofu
drained and pressed, then cubed
¼
cup
water
¼
cup
apple cider vinegar
2
tablespoons
lemon juice
½
tablespoon
dried parsley
or other herb
½
teaspoon
salt
more or less, depending on preference
Instructions
Combine everything together in a bowl.
Cover and place in the refrigerator overnight. The longer it marinates, the tastier!
Notes
If you're in a pinch, let the tofu feta marinate for at least one hour.
