These eggplant pizza bites are dairy-free, gluten-free, vegan, and low-carb! Each slice is topped with pizza sauce, plant-based cheese, and fresh basil. Enjoy them as a light lunch or fun snack.
Preheat oven to 425F. Cut a medium eggplant into ½ inch slices, brush each slice with a little olive oil, and sprinkle with salt and pepper.
Place on a prepared baking sheet and bake for 15 minutes. Flip over, top with pizza sauce and your favorite vegan cheese. Place back in the oven for about 5-10 minutes. Serve warm and enjoy!
