4-Ingredient Eggplant Pizza
These roasted eggplant pizzas can be topped to your heart's desire! I kept it simple, but feel free add your favorite pizza toppings.
- Eggplant: Pick an eggplant that's smooth, shiny, and feels heavy
- Pizza sauce: Homemade or store-bought
- Dairy-free cheese: Or whatever you prefer
- Fresh basil: Don't have it, don't worry! Use dried instead
Easy Mini Eggplant Pizzas
This recipe only calls for a few ingredients and comes together in about 15 minutes from start to finish!
Start by preheating the oven to 425F. Cut a medium eggplant into ½ inch slices, brush each slice with a little olive oil, and sprinkle with salt, pepper, and garlic powder. Place on a prepared baking sheet and bake for 15 minutes. Flip over, top with pizza sauce and your favorite vegan cheese. Place back in the oven for about 5-10 minutes. Serve warm and enjoy!
