Dairy Free Shrimp Scampi
This dairy free shrimp scampi sauce recipe comes together with a combination of olive oil and non dairy butter along with garlic, broth, lemon juice, and fresh parsley. No wine!

Ingredients

olive oil

tablespoons
dairy free butter
3
cloves garlic
minced
1
pound
raw shrimp
¼
cup
broth
2
tablespoons
lemon juice
2
tablespoons
fresh chopped parsley
Instructions
If serving over pasta, cook 12 ounces linguine. Optionally, reserve ¼ cup pasta water before draining to stir into scampi sauce.
Heat olive oil and half of the dairy free butter in a large pan. Add garlic and saute for about 1 minutes.
Add shrimp, season with salt and pepper, and let cook for about 2 minutes on each side.
Pour in broth and bring to a simmer. Once the shrimp is cooked through, add remaining 2 tablespoons of dairy free butter and lemon juice.
Remove from heat and stir in fresh parsley. Serve and enjoy!
