Unroll the crescent dough and separate into 8 triangles. Cut each triangle lengthwise into 3 narrow triangles. A pizza cutter or dough scraper helps cut the dough into perfect strips.
Place the mini sausage on the wide side of the crescent roll and wrap the dough around. Repeat with remaining pieces.
Working in batches, arrange pigs in a blanket in air fryer basket in a single layer, leaving enough space for the dough to rise and expand.
Air fry pigs in a blanket at 300F for 9-10 minutes. They are done when the crescent tops are golden brown.
Continue to air fry in batches. Since the air fryer will be warm from the previous batch, you may have to reduce cook time by a minute or so.

Store cooked and cooled pigs in a blanket in a sealed bag or air tight container for up to 1 week in the refrigerator or for up to 3 months in the freezer.To reheat leftovers, air fry at 350F for 3-5 minutes, until warmed through. If air frying frozen pigs in a blanket, do not thaw but add an extra 1-2 minutes to the cook time.To cook pigs in a blanket in the oven instead, bake at 375F for 12 minutes, or until golden brown.
