Add all of the ingredients to a food processor or high speed blender.
Blend until smooth and creamy, scraping down the sides as needed.
Taste and adjust seasoning. Serve immediately or stir in a can of diced tomatoes with green chilies.
Notes
Vegan queso dip can be served at room temp, chilled, or warm. Heat on the stovetop or in the microwave.Store leftovers in an airtight container the fridge for up to 5 days.
