Chickpea Salad Sandwich
Chickpea Salad Sandwich is the perfect make-ahead lunch. Combine chickpeas with veggies, vegan yogurt, dijon mustard, apple cider vinegar, and fresh dill for a protein-packed meal.

Ingredients

cans
chickpeas
drained and rinsed
½
cup
chopped celery
½
cup
chopped bell pepper
⅓
cup
chopped red onion
⅓
cup
chopped baby carrots
¼
cup
vegan yogurt
1
tablespoon
dijon mustard
1
tablespoon
apple cider vinegar
Salt and pepper
to taste
Fresh dill
for garnish
Instructions
Mash drained and rinsed chickpeas in a medium sized bowl then mix in chopped vegetables.
Stir in remaining ingredients until well combined. Taste and adjust seasoning, if needed.
Serve on toasted bread and garnish with fresh dill.
Notes
Store leftovers covered in the refrigerator for up to 5 days.
