– 1 ¾ cups all-purpose flour – 2 teaspoons baking powder – ½ teaspoon baking soda – ½ teaspoon salt – ¼ cup melted coconut oil – 1 teaspoon vanilla extract – ⅓ cup sugar – 3 large bananas mashed – ¼ cup dairy-free chocolate chips
In two separate bowls, whisk the dry and the wet ingredients. Mix together until just combined.
Stir in mashed bananas then fold in chocolate chips. Transfer batter to a greased muffin pan.
Bake at 350F for 25 minutes. Remove from oven and let cool for 15 minutes then transfer to wire rack. Enjoy!
