These vegan pumpkin spice cookies are perfect for fall with their chewy centers and  crisp edges. They resemble a snickerdoodle with their cinnamon sugar coating.

Cookies – ½ cup vegan butter, softened – 1 ¼ cups sugar – 2 ½ cups all-purpose flour – 1 teaspoon baking soda – 1 teaspoon pumpkin pie spice – ½ teaspoon salt – ½ cup canned pumpkin puree – 1 egg replacer – 1 teaspoon vanilla extract Cinnamon Sugar Topping – 3 tablespoons sugar – 1 teaspoon ground cinnamon


STEP 1: Beat butter and sugar together until well combined. Then whisk dry ingredients together in a large bowl.

STEP 2: To the butter and sugar mixture, mix in the wet ingredients, then slowly add the flour mixture.

STEP 3: Using a tablespoon, roll dough into balls and coat in cinnamon sugar. Place on prepared baking sheets.

STEP 4: Bake at 350F for 10-15 minutes. Let cool slightly on baking sheet then transfer to wire racks. Enjoy!
