• Brown sugar • Melted coconut oil • Dairy-free milk • Ground flaxseed • Vanilla extract • Peppermint extract • All-purpose flour • Cocoa powder • Baking powder • Salt • Granulated sugar, for rolling • Powdered sugar, for rolling
In a large mixing bowl, whisk together wet ingredients. Then add dry ingredients and stir until a dough forms. Let chill in the fridge for 2 hours.
Place sugars in two small bowls and scoop balls of dough and roll into granulated sugar then coat in powdered sugar.
Bake at 350F for about 12 minutes, remove from oven, and let cool on the baking sheet for 15 minutes. These will firm up as they cool!
