• Dairy free milk • Oil • Ground flaxseed • Apple cider vinegar • Vanilla exact • All purpose flour • Coconut sugar • Baking powder • Baking soda • Salt

INGREDIENTS

I love using ground flax seed when baking because it's a great source of fiber!

BAKING TIP

Pour dairy-free milk (or milk of choice) into a mixing bowl.

Add oil to mixing bowl.

Add apple cider vinegar or substitute with lemon juice.

Add ground flaxseed.

Add vanilla extract.

Whisk to combine!

In a second large mixing bowl, add flour and coconut sugar.

Add baking soda to mixing bowl.

Add baking powder.

Add salt.

Whisk ingredients together.

Pour wet ingredients into dry.

Stir until just combined.

Make your pancakes super thick and fluffy or  thin, depending on your preference, by adding and more or less liquid!

Using a 1/4 cup, scoop pancake batter onto warmed skillet.

Cook until the bottoms are golden brown and bubbles start to form on top. Flip and cook for another few minutes.

Enjoy with maple syrup and a pat of butter.
