– 2 cans corn, drained and rinsed – 1 jalapeno, diced – 2 cloves fresh garlic, minced – ¼ cup vegan mayo (if needed) – ¼ cup diced red onion – 1 tablespoon fresh lime juice – Fresh cilantro, salt, pepper, to taste
TIP: Roll the lime before slicing to make it easier to release the fresh juice!
Give everything a big stir!
