Vegan Mashed Potatoes

Add roughly chopped potatoes to a pot with boiling water. Cook until fork tender.

Once cooked, drain water, reserving about 1 cup. Return potatoes back to pot and mash. (Don't overmix!)

Add extra-virgin olive oil, reserved water, fresh parsley, salt, and pepper. Stir to combine. Enjoy!
