BETTER THAN CHIPOTLE TOFU SOFRITAS

Make your own homemade sofritas burrito bowl with cilantro lime rice using seasoned tofu, vegetables, black beans, and of course, GUAC!

At Chipotle, sofritas are a meat-free menu item using shredded tofu braised in chipotle chilies, roasted poblanos, and a blend of spices. Perfect for vegans and vegetarians!

– 1 tablespoon olive oil – 1 (16-oz package) extra firm tofu, drained and pressed – 2 chipotle peppers canned in adobo sauce – 2 tablespoons adobo sauce – 2 tablespoons tomato paste – 1 large lemon, juiced – 1/2 small onion, chopped – 2-3 garlic cloves – 1 teaspoon sugar – 1 teaspoon salt – 1/4 cup water

Heat olive oil in a skillet over medium heat and crumble drained and pressed tofu, using a wooden spoon or potato masher.

Combine remaining ingredients together in a food processor. Mix until smooth then transfer to skillet with tofu. Let cook over low  heat.

Prepare additional burrito bowl toppings such as peppers, onion, rice, and guacamole.

To assemble burrito bowls, portion out rice at the bottom of each bowl. Top with desired amount of tofu sofritas, black beans, vegetables.

Serve with guacamole and enjoy!
