INGREDIENTS - 8 oz pasta - 1 red bell pepper, diced - 1/4 red onion, diced - 2 celery, diced - 1 carrot, diced - 1 cup peas DRESSING - 1 cup vegan mayonnaise - 2 tablespoons pickle juice - 2 tablespoons apple cider vinegar - 1 tablespoon dijon mustard - 1 teaspoon garlic powder - Salt and pepper, to taste - Chopped parsley, if desired
This easy macaroni salad is kid-friendly, quick, and easy. Perfect for any summer celebration!
Add peas to cooked pasta.
Add diced red bell pepper.
Add diced celery.
Add chopped carrot.
Add diced red onion.
Pour dressing over pasta and veggies.
Stir to combine.
