STEP ONE

Place chopped potatoes and carrots in a  pot of water. Bring to a boil and cook until fork-tender. Once cooked through, drain water from the pot and transfer veggies to a food processor or blender.

STEP TWO

Add water, olive oil, juice from one lemon, nutritional yeast, garlic powder, salt, and pepper. Blend until smooth then transfer to a skillet. Stir in diced tomatoes & green chilies.

STEP THREE

Taste and adjust seasoning, if needed. Serve in skillet and enjoy!
