QUICK AND EASY CRISPY CORN FRITTERS

These delicious homemade corn fritters are crisp, light, and fluffy! They're quick and easy to make, perfect for a filling side dish or appetizer.
– 3 cups whole corn kernels – 1 cup all-purpose flour – 1/4 cup cornmeal – 1 tablespoon granulated sugar – 1 tablespoon baking powder – 3/4 cup dairy-free milk – 1 prepared egg replacer, if needed – 1 tablespoon plant-based butter – Salt and pepper, to taste – Sliced green onion, for topping
INGREDIENTS
Combine all ingredients together in a large mixing bowl. Stir until smooth. Meanwhile, warm cooking oil in a skillet over medium heat.
Using a 1/4 cup, scoop batter into skillet and form small rounds. Cook for about 5 minutes on each side. Garnish with sliced green onion.
