my mini sweet pepper nachos are the ultimate low-carb, dairy-free, gluten-free, and vegan snack. perfect for game day!
place sliced peppers on a baking sheet and top with desired ingredients! a few of my favorites include beans and corn.
add plant-based cheese, sliced jalapeño, and any other toppings!
bake at 400F for 10 minutes. i like to add diced tomato + red onion on top at this point now!
enjoy served with vegan queso, salsa, or guacamole!
there are some delicious dairy-free dips at the grocery store. however, for this drizzle: melt 2 tablespoons coconut oil in a skillet over medium heat. then add 1/3 cup flour and whisk together. sprinkle 1/3 cup nutritional yeast, 1 teaspoon salt, 1/2 teaspoon paprika, and 1/4 teaspoon turmeric and whisk again, until clumpy. turn heat to low and stream in 1 cup water. whisk until thick, smooth, and creamy! for a thinner sauce, add more water until desired consistency is reached. enjoy!
