Smoked Chicken Breast

This pellet grill chicken breast recipe is easy to make with a flavorful marinade. Smoked chicken breast is tender, juicy, and great for meal prep!

If you're looking for a simple make-ahead meal that can be used in a variety of different ways, you'll love this easy smoker recipe. It's easy to adapt so feel free to use your favorite marinate, sauce, or dry rub.

There are so many ways to serve these juicy chicken breasts! The smoky flavor is delicious but not overpowering so it's super versatile. Serve whole chicken breasts as a main with creamer potatoes, smoked green beans, roasted sweet potatoes or risotto. Use sliced or diced smoked chicken in pasta salad, tacos, or your favorite pasta dish like tahini pasta or rasta pasta!

Ingredient notes

Chicken: For ease and convenience, I suggest using boneless skinless chicken breasts.

Marinade: Use your favorite marinade or seasoning blend. Again, to keep it convenient, we're using store-bought Italian dressing. It's a mix of vinegar, oil, garlic, onion, red bell pepper, spices, and lemon juice.

How to store leftovers

Store leftover chicken in an airtight container in the refrigerator for up to 3-4 days. For best results, reheat chicken in a small pan with a tablespoon of water.

Equipment

  • Electric wood pellet grill
  • Digital meat thermometer

Ingredients
  

  • 2 pounds boneless skinless chicken breast
  • ¼ cup italian dressing or your favorite marinade
Prevent your screen from going dark while you're cooking!

Instructions
 

  • Place chicken and dressing in a large ziplock bag, massage gently to evenly coat. Place in the fridge to marinate for at least 30 minutes or up to 2 hours.
  • Preheat pellet grill smoker to 300F. Place the marinated chicken directly on the grill grates and smoke for 30 minutes. Flip chicken and smoke for an additional 30 minutes, or until the internal temperature of the thickest part of the meat reaches 165F. (Use an instant-read thermometer to check!)
  • Remove the chicken from the smoker, tent with foil for at least 10 minutes, then slice or serve.
