Ingredients
- Chickpeas (also known as garbanzo beans)
- Tahini
- Olive oil
- Lemon juice
- Garlic
- Sweet onions
What is aquafaba?
Aquafaba is the chickpea brine or the liquid found in a can of garbanzo beans.
When you're draining the chickpeas, be sure to reserve some of the aquafaba! It can be used in place of egg whites in cooking and as a replacement in several other recipes.
For hummus, I like blending in about 3-4 tablespoons of aquafaba. It's my secret for the fluffiest hummus you've ever tasted! The end result is incredibly smooth and creamy.
Can I make hummus without tahini?
Technically yes, but I reallyyy urge you to give tahini a try if you can!
I used to omit tahini from homemade hummus, but it gives the dip its classic flavor and consistency.
To make hummus without tahini, either leave it out completely or use a substitute like cashew butter, almond butter, or sunflower butter.
How to Make
To caramelize onions, heat oil in a large skillet over medium heat. Add the onions and let them start sweating. Stir in a pinch of salt and reduce heat to low. Cook the onions for 30-40 minutes, or until they are a deep golden brown, stirring every 10 minutes or so. You can optionally add balsamic vinegar for a deeper flavor.
Toss the remaining hummus ingredients in a food processor and blend until completely smooth. You may need to scrape down the sides to get everything incorporated.
Transfer the hummus to a serving bowl, stir in about a quarter of the caramelized onions, then top with the remaining or desired amount.
How to Serve
Serve hummus with warm pita, crackers, and fresh vegetables like sliced cucumber, celery, radish, and bell peppers.
How to Store Leftovers
To store, place hummus in a sealed airtight container and place in the fridge for up to one week.
