There are several ways to cook cauliflower gnocchi. Air frying them uses less oil and makes each piece crisp on the outside but soft on the inside!
Vegan Cauliflower Gnocchi with Pesto
For this quick & easy recipe, here's what you'll need:
- Cauliflower gnocchi ($2.79)
- Vegan pesto ($3.79)
- Pine nuts for topping, optional
Homemade Dairy Free Pesto
Want to make your own dairy free pesto at home? Go for it. Here's how:
- 2 cups fresh basil
- ⅓ cup pine nuts
- ¼ cup extra virgin olive oil
- 4 garlic cloves, roughly chopped
- 1 tablespoon lemon juice
- 2 tablespoons nutritional yeast
- Salt and pepper, to taste
Mix all the ingredients together until combined in a food processor or NutriBullet. Taste and adjust seasoning, if needed. This is best when served fresh, but can be refrigerated covered for up to a week.
How to Air Fry Cauliflower Gnocchi
- Forget the instructions on the package!
- Spray your air fryer basket with cooking oil.
- Pour all of the frozen gnocchi onto the prepared air fryer basket.
- Shake and optionally spray again.
- Arrange cauliflower gnocchi in a single layer.
- Air fry at 390F for about 15 minutes.
- Transfer cooked gnocchi to a mixing bowl.
- Gently toss with about a ½ cup of vegan pesto.
- Top with pine nuts, if you want.
- Serve and enjoy immediately!

- Spray the air fryer basket with cooking oil. Pour all of the frozen gnocchi onto the prepared air fryer basket. Shake and optionally spray again.
- Arrange cauliflower gnocchi in a single layer. Air fry at 390F for about 15 minutes.
- Transfer cooked gnocchi to a mixing bowl. Gently toss with vegan pesto.
- Top with pine nuts and serve immediately!
