These easy baked vegan apple cider donuts come together with 10 ingredients, in about 30 minutes. They're dairy-free, egg-free, vegan-friendly, and can easily be made gluten-free. Top with a cinnamon sugar coating for a delicious fall-inspired dessert!

After posting my baked pumpkin donuts recipe, several of y'all requested apple cider donuts be next on my list. Well here we are, just in time for Thanksgiving!

These baked donuts come together with minimal prep work. Simply reduce the apple cider down, whisk everything together, pipe into a donut pan, and bake to perfection.

Equipment

Ingredients

Here's what you need to make the best baked vegan apple cider donut recipe that the whole family will enjoy! Plus my recommended substitutions.

  • Apple cider: Make sure to use apple cider, not apple juice, apple cider vinegar, or apple sauce!
  • Flour: Use regular all purpose flour. For gluten free donuts, use your go-to gluten free flour blend.
  • Sugar: I suggest using granulated sugar but coconut sugar is a great alternative.
  • Baking powder and baking soda: These simple ingredients act as the leavening agent and give the donuts their soft, fluffy, airy texture.
  • Cinnamon and nutmeg: The best part of this delicious treat is that it's bursting with fall flavors!
  • Salt: Just a pinch to balance and enhance the flavors.
  • Vegan butter: Use your favorite plant based butter or neutral oil like refined coconut oil or canola oil.
  • Dairy free milk: Use any unsweetened and unflavored non dairy milk. I typically use oat milk, almond milk, soy milk, or coconut milk.

How to make baked apple cider donuts

  1. Reduce the apple cider: Reducing the apple cider concentrates the bold apple flavor for an unbeatable taste.
  2. Whisk dry ingredients together: In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, salt, and nutmeg.
  3. Add wet ingredients into mixing bowl: Pour in reduced apple cider, melted vegan butter or oil, and dairy free milk. Stir until just combined!
  4. Pipe batter into donut pan: Grease donut pan with cooking spray then fill with the batter using a piping bag.
  5. Bake for 10 minutes: Bake at 350F for about 10 minutes, remove from oven, and flip onto a wire rack to cool to room temperature.
  6. Let cool and decorate: Once cooled completely, make the cinnamon sugar coating by melting vegan butter and whisking cinnamon and sugar together in a small bowl. Brush the tops of each donut with melted butter and dip into the cinnamon sugar.

Ingredients
  

For the Donuts

  • 1 ½ cups apple cider
  • 1 ½ cup flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • 2 tablespoons melted vegan butter
  • 2 tablespoons dairy-free milk

For the Cinnamon Sugar Coating

  • 2 tablespoons melted vegan butter
  • ¼ cup sugar
  • 1 teaspoon cinnamon

Instructions
 

  • Start by reducing the apple cider in a small saucepan on the stove. To do this, bring apple cider to a boil, then reduce to a simmer, stirring occasionally for about 15 minutes. Once reduced to about ½ cup, remove from heat and let cool.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, salt, and nutmeg. Pour in reduced apple cider, melted vegan butter, and dairy-free milk. Stir to combine, being careful not to over mix! If the batter seems too dry, add extra dairy-free milk in one tablespoon at a time.
  • Pipe the batter into a prepared donut pan, filling about ¾ of the way full. Bake at 350F for about 10 minutes. Flip baked donuts onto a cooling rack and let cool completely!
  • To make cinnamon sugar coating, melt vegan butter. In a small bowl, whisk together sugar and cinnamon. Brush the tops of each donut with melted butter and dip into the cinnamon sugar.

Notes

Best if enjoyed fresh! Store leftovers in an airtight container at room temperature for up to 3 days or in the fridge for up to 5 days.

    Do you mean apple cider as in apple juice or apple cider vinegar? I have the latter but haven't seen any cider in the stores.
