Chickpea Salad Sandwich is the perfect make-ahead lunch. Combine chickpeas with veggies, vegan yogurt, dijon mustard, apple cider vinegar, and fresh dill for a protein-packed meal.
When I think back on my favorite lunches or after school snacks, a few meals come to mind. Pizza pockets, bagel bites, and chicken salad sandwiches.
As most of y'all know, I'm not a huge meat eater and I love chickpeas! It was only a matter of time until I veganized this family favorite.
It's filling and tasty enough even meat eaters will enjoy it! It's one of my go-to lunches because of how fast it comes together and how well it stays for leftovers.
You can have it on its own, piled high on toasted bread, in a wrap, spooned in a pita pocket, or on a bed of lettuce. The addition of the fresh dill really brings all the flavors together, so try not to skip on that step.
How To Make A Chickpea Salad Sandwich
Start by mashing the chickpeas once they've been drained and rinsed. Then add the chopped celery, bell pepper, red onion, and carrots. Give everything a good stir then mix in the vegan yogurt, dijon mustard, ACV, salt and pepper. When serving, don't forget that fresh dill!

Chickpea Salad Sandwich
Ingredients
- 2 cans chickpeas drained and rinsed
- ½ cup chopped celery
- ½ cup chopped bell pepper
- ⅓ cup chopped red onion
- ⅓ cup chopped baby carrots
- ¼ cup vegan yogurt
- 1 tablespoon dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- Mash drained and rinsed chickpeas in a medium sized bowl then mix in chopped vegetables.
- Stir in remaining ingredients until well combined. Taste and adjust seasoning, if needed.
- Serve on toasted bread and garnish with fresh dill.

I just love chickpea salad, but I've never tried making it with dairy-free yogurt! This looks fantastic. It looks great how chunky you left it. I usually go for the full mash, but might try it this way next time.
