We did it! We survived the first week of 2018! Who went into this year with health or diet resolutions? Are you slurping soup through January or are you have more of the "new year, same food" mindset? To be honest, I've been eating a mix of spiralized veggies and comfort food. It's all about balance, right?
One of my favorite comfort foods is an ooey-gooey grilled cheese. They're so simple but so satisfying, every single time. Since we've been doing a lot of pizza around here lately, we had extra vegan mozzarella and parmesan cheese. When I didn't feel like throwing lunch together, my husband suggested we make our own sandwiches. I love that you can make your grilled cheese as basic or extra as you want.
I absolutely love dipping my grilled cheese into ketchup but when using motz, fresh basil, and tomato, leftover marinara is the go-to dipping sauce.
Also, just so we're clear I'm not claiming to be a grilled cheese connoisseur or expert. I just really love eating them and wanted to share my newest creation. These sandwiches are personal and everybody has their preferences. I personally believe crust to crust is a must when buttering the bread. I also love adding fresh basil and seasoning on the inside so everything melts together. I don't always add tomato but something I feel like I need to beef it up with some veggies. What do you think? Simple Italian Grilled Cheese Sandwich (Vegan)
Ingredients
- 2 slices bread
- 2 tablespoons softened vegan butter
- 1 tablespoon vegan parmesan
- 1 ounce vegan mozzarella cheese
- 2 slices tomato
- 2 fresh basil leaves
- 1 pinch Italian seasoning
- Fresh ground pepper to taste
- For serving: ¼ marinara sauce
Instructions
- Heat a skillet over medium heat.
- Mix butter and parmesan together in a small bowl then spread the outsides of bread, crust to crust.
- Place bread butter side down on the skillet then add mozzarella, top with tomato, basil, Italian seasoning, and pepper. Top with the second slice of bread faced butter side up.
- Cook until the cheese is melty and bread is golden, about 5 minutes per side.

I’m by no means a vegan but I do LOVE grilled chesse! I think it looks great but if you wanted to add some roasted peppers or spinach I’m sure there’s plenty of room to experiment.
