Avocado Tuna Salad Sandwich is a quick, easy, and healthy lunch option! Simply mix together avocado, tuna, red onion, lemon juice, dijon mustard, and spices.
When I discover a new product or pairing, I tend to go a little overboard with it. Ahem, sweet potatoes, tofu, kale... My latest obsession is out, canned tuna! It's protein packed and contains tons of vitamins. In my mind, the perfect lunch base.
After my husband did some research on which brand, what type, etc. we should get, we decided on Bumble Bee Solid White Albacore Tuna in Water. It's gluten-free, kosher, and delicious! I honestly can't believe I'm saying those words!
For years, I never bought canned seafood because I didn't know anything about it and the only experience I had with it was my best friend in high school opening her can in the lunchroom and receiving glares. Thankfully, my husband and I both work from home so we don't have to worry about stinking a break room up!
Since I love avocado, what better pairing to go with!? Of course, it totally worked and we both really enjoyed it. We even added some Dijon mustard and red onion to spruce it up a bit. I have been tempted to recreate a chicken salad sandwich with tuna, including apples and walnuts–but I'm not sure I need to mess with this simple and tasty mixture.
Avocado Tuna Salad Sandwich
Ingredients
- 1 avocado
- 1 can solid white albacore tuna
- ⅛ red onion diced
- 1 tablespoon lemon juice
- ½ teaspoon Dijon mustard
- ¼ teaspoon cumin
- Salt and pepper to taste
- 2 slices of bread toasted
Instructions
- Mash avocado in a small-medium bowl.
- Add tuna, red onion, lemon juice, mustard, cumin, salt, and pepper.
- Mix very well. Spread on toasted bread then cut in half.

When I was a young teenager (and therefore very lazy with my cooking options) I would make tuna sandwiches all the time anytime I was home alone. Avocados weren't big at the time though, so I might have to revisit this idea with a new ingredient!
