Sweet potatoes are by far one of my favorite ingredients to roast! At one point in time, I was roasting them twice a week. I love how versatile they are and can be tossed in a salad or bowl, or served as a side.
I’ve roasted sweet potatoes with their skin on and off and love the added bite you get with the skin on. Plus you get all those extra nutrients! Sometimes I don’t pick up the best sweet potatoes and I have to peel the skin, don’t fret because they’re just as tasty.
Don’t be afraid to play around with spices either! Find what you like and what works best for your taste buds. You really can’t go wrong, just sprinkle on your favorites!
Simple Roasted Sweet Potatoes
2 large sweet potatoes
2 teaspoons olive oil
Salt and pepper, to taste
Seasonings of choice: I love using cumin, turmeric, paprika, chili powder, garlic powder, and onion powder
1. Preheat oven to 400 degrees F.
2. Wash sweet potatoes and then chop into cubes, wedges, or rounds.
3. Spread onto lined and sprayed baking sheet. Toss olive oil and seasonings to coat everything.
4. Bake for 40 minutes, flipping once halfway through. Make sure both sides get crispy.
