I love cooking with fresh basil. This recipe wouldn’t be quite the same without it. The aromatics bring this dish together for a great simple dinner.
Blistered Tomato Pasta With Basil
1 pound pasta
6 tablespoons olive oil, divided
3 cloves garlic, minced
1-pint grape tomatoes
1 cup fresh basil, chopped
Salt and pepper, to taste
1. In a large pot, cook pasta according to the directions on the package. Drain and set aside.
2. As the pasta cooks, heat oil in a large skillet. Add garlic, tomatoes, salt, and pepper. Cook over medium-high heat, stirring occasionally. After about 5 minutes the tomatoes should soften and burst.
3. Toss pasta with blistered tomatoes and basil.
