White Bean and Sweet Potato Patty is healthy and filling, packed with plenty of vegetables and nutrients to keep you full all afternoon long!
Enjoy on a bun, in a salad, or on its own! My favorite has been on a bun with avocado and in a salad with spinach and honey mustard drizzle.
Want to make your own buns? Use my eggless dinner roll recipe but form the balls larger, depending on preferred size!
White Bean and Sweet Potato Patty
Equipment
Ingredients
- 1 (15-ounce) can white beans drained and rinsed
- 2 medium sweet potatoes cooked and mashed
- ½ yellow onion chopped
- 1 flax egg
- ½ cup panko bread crumbs
- 2 tablespoon nutritional yeast
- 2 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
- Preheat oven to 400 degrees F. Prepare a baking sheet lined and sprayed with cooking spray.
- Place everything in your food processor except for flax egg and mix. Once mixed well, add flax egg and pulse until everything is incorporated. You will have to stop and scrape down the sides a few times.
- Form patties and place on prepared baking sheet. Bake for about 25 minutes, or until lightly browned. Enjoy on a bun, in a salad, or on its own!
